Turkey Teriyaki Rice Bowls

My coworker brought this for lunch one day and it was delicious. I am not much of a pork eater (I don’t come from pork country), but I really enjoyed it. We ended up reheating it in the slow cooker for a few hours and it was excellent.

This would make a great pot luck recipe if you need one. First on the stove top then to the slow cooker. I think if you brown the meat you could do the remaining steps in the slow cooker also.

Ingredients: 

Teriyaki Sauce

  • 1/2 cup Low Sodium Soy Sauce
  • 1/4 cup water
  • tablespoons Red Wine Vinegar
  • 2 tablespoons brown sugar or less as desired
  • 2 tablespoons granulated sugar or less as desired
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water
  • Ground Turkey
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 tablespoons minced garlic
  • 1 pound Ground Turkey
  • 1 cup finely chopped carrots
  • 2 large carrots peeled and grated
  • 2 green onions diced, for garnish

Instructions:

  1. Mix soy sauce, 1/4 cup water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved.
  2. In a small bowl, whisk together 2 tablespoons warm water and cornstarch until cornstarch is completely dissolved.
  3. Heat sauce over medium high heat. Slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook until soft.
  5. Crumble ground turkey and garlic into the pan and cook until turkey is about half cooked. Add grated carrots and chopped carrots and continue to cook until turkey is no longer pink.
  6. Pour teriyaki sauce over cooked turkey and vegetable mixture and stir. Simmer for about five minutes to combine the flavors.

Spoon meat over rice or noodles. Garnish with green onions and serve immediately.

Sweet Heat Pineapple Chicken (Slow Cooker)

This is one of my favorite recipes. I think the red pepper flakes make it. It has a very sweet heat flavor. I have made it without the pepper flakes and the recipe felt lacking. I would post where I got the recipe, but in all honesty I took several recipes and revamped them. None of the recipes I found were exactly what I was looking for.

This is a great recipe full of flavor and easy to make. I think it is better than most take out versions on similar recipes.

INGREDIENTS

  • 20 oz can pineapple chunks (drain but reserve juice)
  • 1-1/2 pounds raw boneless chicken chunks (your choice of chicken)
  • 1 green bell pepper, cut in 1-inch chunks
  • 1 red bell pepper, cut in 1-inch chunks
  • 1 Onion cut in 1-inch chunks
  • White rice (optional)

Sauce:

  • Reserved pineapple juice
  • 1/3 cup brown sugar
  • 1/4 cup sweet chili sauce
  • 3 tbs soy sauce
  • 2 clove garlic, minced
  • 1 tsp salt
  • Thickening:
  • 2 tbs cornstarch
  • 1 tsp red pepper flakes (More of less)

INSTRUCTIONS

  1. Place chicken in a lined slow cooker (for easy clean up)
  2. Mix sauce ingredients in a small bowl and pour over chicken. Cover and cook on low 4-5 hours or high 2-3 hours
  3. Add the pineapple chunks and the bell peppers and cook an additional 2 hours on low, 1 hour on high
  4. To thicken the sauce mix cornstarch in 4 tbsp of water the stir in slow cooker
  5. Cook an additional 10 minutes on high until thicken
  6. Serve over white rice

Pizza Dough Bread Sticks

 

This is a quick and easy way to make bread sticks especially in a hurry. There isn’t any science to this recipe but it’s easy and anyone can make these. I would even go as to call them semi-homemade.

This is a great kid friendly recipe that everyone can get involved in. you never know when you will need bread sticks or you catch a can of pizza dough on sale and you have no use for it. Quick easy, and delicious!

Ingredients:

  • 1 can pizza dough
  • ½ stick butter
  • 2 cloves of garlic minced
  • 2 tbsp. Parmesan cheese
  • 1/4 tsp. dried Italian seasoning

Directions:

  1. To a jelly roll pan add a piece of parchment paper
  2. Roll out the pizza dough onto the parchment paper and make sure it’s spread out and flat.
  3. Melt butter in the microwave then add the minced garlic. Do not add the garlic to the butter before you microwave it or it will turn to a clump.
  4. Once the butter is melted spread it over the pizza dough, then top the garlic butter with Parmesan cheese, then Italian seasoning.
  5. With a pizza cutter cute the dough into bread sticks, but do not separate the bread sticks.
  6. Follow the baking directions on the can. Watch your bread sticks carefully because you want the bread sticks to be soft, but cooked.

Buffalo Meatballs (Slow Cooker)

These buffalo meatballs are outstanding. They go to the top of my list as the perfect party food or potluck dish. This receipt is very easy to put together and delicious! I highly recommend this recipe to anyone. They are not too spicy so you can always up the spice if that is your thing.

Ingredients:

  • 32-ounce bag of meatballs (Not the Italian meatballs)

Sauce:

  • 1 cup Frank’s Red Hot Original Sauce, plus more to taste
  • 1/2 cup + 1 tablespoon honey
  • 1/2 cup apricot preserves
  • 1/2 cup brown sugar
  • 1/4 cup reduced sodium soy sauce
  • 1-1/2 tablespoons cornstarch

Directions:

  1. Mix all the sauce ingredients together in a bowl and set aside.
  2. Add meatballs to a lined slow cooker for easy clean up
  3. Add the sauce to the slow cooker and mix well.
  4. Cook on low for 4-6 hours or on high for 2-3 hours. Watch to insure they do not burn

Sugar Cookie Fudge

If you like raw sugar cookie dough, then you will love this recipe. If you are like me, and you don’t like cookie dough, then you will probably not care for this recipe. It’s beautiful and makes a great presentation I just didn’t care for it.

This is super easy to make! It is also great for any holiday or event. Again, assuming you like raw cookie dough. My cousin thought this fudge was amazing but she loves cookie dough.

Give it a try if it’s your thing just have all the ingredients ready to go because the whole process moves fast! Dieters need not make!

INGREDIENTS

  • 2- 12 oz bags white chocolate chips
  • 1-1/4 cups sugar cookie mix (Betty Crocker Baking Mix, Sugar Cookie, 17.5 oz Pouch
  • 14 oz can of sweetened condensed milk
  • Any sprinkles (like Wilton Rainbow Nonpareil Sprinkles)

INSTRUCTIONS

  1. Line a 8X8 or 9×9 baking dish with parchment paper the spray with non-stick spray.
  2. To a pot add white chocolate chips and allow them to melt slowly. Do not turn the heat up too high. Watch the chips while they are melting and stir
  3. Add in sugar cookie mix, and sweetened condensed milk
  4. Continue to stir until everything is melted and smooth.
  5. Add about 1/2 cup or more sprinkles to the mixture.
  6. Pour fudge into the baking dish and top with additional sprinkles.
  7. Place in refrigerator until firm
  8. Slice into bite size pieces and serve.
